Growing up I always had some home-made biscuits or a piece of cake in my lunchbox 🙂
We very rarely had any pre-packaged snacks and my girls are the same. They occasionally get a packet of potato chips or some rice crackers but I generally make everything in their lunchbox from scratch. By cooking everything myself I control the amount of sugar and can guarantee that there are no hidden additives or other nasties.
These Old Fashioned Sugar Cookies are absolutely delicious and a favourite in our house.
IngredientsÂ
- 100 grams of Sugar (coconut, raw, caster or your preferred sugar)
- 125 grams of Salted Butter (softened)
- 250 grams of Self Raising Flour (spelt, white or wholemeal)
- 1 teaspoon Vanilla Bean Paste or Vanilla Extract
- 1 cup Icing Sugar (sifted)
- 1/4 teaspoon Butter (softened)
- 1/2 tablespoon boiling Water
- Sprinkles
Using you bench mixer or hand held beaters cream the butter and sugar together until smooth.
Add the vanilla and self raising flour and mix until combined.
Roll tablespoons of the mixture into balls and place on a lined baking tray. Bake in a 180 degree oven for 12-15 minutes of until lightly golden.
Allow the biscuits to cool completely before icing.
In a small bowl mix the butter and boiling water together until the butter is melted. Add the icing sugar and stir until smooth (you may need to add a little extra hot water to get a smooth consistency). Drop teaspoons of the icing onto the centre of the biscuits and scatter over some sprinkles.

Weigh sugar into bowl and mill 5 seconds/speed7.
Weigh butter and mix 5 seconds/speed7.
Weigh flour and add vanilla bean paste to the bowl and mix 10 second/speed5.
