School is back in a few days and I am stocking up the freezer with some lunch items for the girls and snacks for myself. These apple and oat bites are delicious and are free from refined sugar. If you wish to cut out the butter completely simply double the amount of apple sauce 🙂 (although I believe everything tastes better with butter as long as it is in moderation).
- 4 tablespoons melted butter
- 1/2 cup organic honey
- 1 egg
- 1/2 cup sugar free apple sauce
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 1 1/2 cups rolled oats
- 2 cups plain wholemeal flour
- 2 teaspoons ground cinnamon (optional)
- 1 teaspoon ground nutmeg (optional)
- 1 medium Granny Smith apple (diced)
In a large mixing bowl whisk together the melted butter and honey until creamy. Add egg, vanilla and apple sauce (mixture will split at this stage so do not worry) and whisk until combined. If you are adding the cinnamon and nutmeg now is the time to stir it through so it is evenly distributed through mixture. Add baking powder, rolled oats and wholemeal flour. Stir until combined then finally add diced apple. Roll tablespoons of mixture into balls and place on a lined baking tray. Bake in a 180 degree oven for 25-30 minutes. These bites do not flatten out to a biscuit shape so you can pack quite a few on a tray. If you prefer a flat biscuit simply press out with a fork 🙂
