We are ordering our fruit and vegetables from a local Organic Fruit and Vegetable Company and the girls are in love with their apples.
Well they were for the first 4 weeks and now are refusing to eat another apple for a few weeks – I have a habit of over doing it on something when they like it 🙁
To use up some of the apples that I have crowing my fruit bowl I decided to make these Apple Pie Bars.
They are refined sugar free and are great for breakfast or that late afternoon snack.

Ingredients
Filling
- 300 grams Granny Smith Apples
- 6-8 Medjool Dates
- 1/2 teaspoon Cinnamon
Pastry
- 60 grams Butter
- 80 grams Honey
- 60 grams Maple Syrup
- 1 teaspoon Vanilla
- 175 grams Plain Flour (white, wholemeal or spelt)
- 60 grams Self Raising Flour
- 1 teaspoon Bi Carb
- 1 teaspoon Cinnamon
- 1/4 teaspoon Mixed Spice
I usually make the apple filling a day before. If you make just before be sure to allow it to cool completely before trying to make the bars.
In a medium saucepan combine the diced apples and dates with 1/2 teaspoon of cinnamon. Cook over a low heat until apples have cooked and completely softened. Remove from the heat and blend with a stick blender until smooth. Remove from the saucepan and put in the fridge to cool completely.
In a small saucepan melt the butter with the honey, maple syrup and vanilla. Remove from the heat and allow to cool slightly. Add the remaining pastry ingredients and stir until combined. This pastry is wet and sticky but don’t be tempted to add more flour. Transfer dough onto a lightly floured bench and gently knead for a minute or two. The mixture will be warm so be careful. Once smooth wrap in cling wrap and put in the fridge for 20 minutes until firm.
Roll the dough into a rectangle about 5 mm thick and slice into 10 large rectangles or 14 small. Divide the filling equally between the rectangles. Bring the edges together until they overlap. Place seam side down on a lined baking tray.
Bake in a 180 degree preheated oven for 18 minutes. They should be golden brown but still soft to the touch. They will firm a little as they cool.
