After a long and interesting day setting up the blog I felt the need to have a special treat for dessert tonight.
Pastry
- 1.5 cups of wholemeal flour
- 1 teaspoon of cinnamon
- 4 tablespoons of melted butter
Blend ingredients in a food processor until combined. Roll out on a floured board and cut into circle shapes with a cutter or flour dusted glass. Gently press into greased muffin pan.
Filling
- 4 apples (any variety)
- 1/2 cup of fresh or frozen raspberries
- 2 tablespoons of honey
- 1 tablespoon of melted butter
Core and dice apples. Place in a microwave safe bowl with 2 tablespoons of water, cover with cling film and microwave for 2 minutes until softened. Mix in melted butter and honey (can also add extra cinnamon at this step). Gently fold in raspberries and spoon into prepared pastry cups.
Crumble
- 1 tablespoon of butter
- 1/2 cups organic oats
- 1/4 cup of wholemeal flour
- 1 tablespoon of honey
Melt butter with honey and mix into dry ingredients. Spoon crumble over filled pastry cups.
Bake in a 170 degree oven for 30 – 40 minutes depending on oven. Serve with home-made vanilla ice cream.
