I absolutely love this banana bread. The flaked coconut adds a different texture and it lovely and moist. Enjoy 🙂
Banana & Coconut Bread
- 2 1/3 cups wholemeal flour
- 2 teaspoons baking powder
- 1/2 cup sugar free flaked coconut
- 2/3 cup maple syrup
- 4 mashed over ripe bananas
- 3 eggs
- 1/3 cup Rice Bran Oil
- 2/3 cup melted butter
In a large mixing bowl whisk together flour, baking powder and flaked coconut. In a separate bowl mash bananas and combine with maple syrup, eggs, oil and melted butter. Combine wet and dry ingredients and stir until well mixed. I like to add some cinnamon and a pinch of nutmeg at this stage but if you do not like spices this recipe is fine without them. Pour into a lined loaf tin and sprinkle with some additional flaked coconut. Bake in a 180 degree oven for 45 minutes to 1 hour. Cake is cooked when center is firm to touch. This cake is best eaten fresh but it is also great toasted for breakfast in the mornings. Enjoy 🙂
