I have always cooked my Lamb and Beef roasts in the slow cooker but it was only recently that I tried cooking a roast chicken. I can honestly say that I don’t think I will oven roast a chicken again 🙂 The chicken is so tender it falls off the bone. I keep the flavours simple because of my fussy family but feel free to add any spices that you would like. You can substitute the lemon with lime and add some Chilli to the spice mix. Enjoy 🙂
BBQ Chicken
- 1 whole Chicken, free range
- 2 large onions, quartered
- 1 large carrot, sliced into chunks
- 2 lemons, 1 whole 1 quartered
- 2 tablespoons paprika
- 1 tablespoon dried garlic
- 1 teaspoon sea salt
Place the onions, carrot and lemon on the base of the slow cooker. In a small bowl combine paprika, garlic and sea salt. Rub spice mixture all over the chicken until evenly coated. Insert whole lemon into the cavity of the chicken. Place chicken on top of the onions. Cook for 4-5 hours on high or 7-8 hours on low (depending on the size of the chicken).
