Not having an oven has been torture for me so when I “borrow” an oven from family I have been doing “bulk bakes”to get us through. Yesterday was spent making muffins to top up our freezer for the next two weeks until my new oven arrives. These muffins can be made using any berry but I love them with blackberries. Enjoy 🙂
- 1 cup wholemeal flour
- 1/2 cup almond meal
- 2 teaspoons baking powder
- 2 eggs
- 2 tablespoons honey
- 1 teaspoons pure vanilla extract
- 1/4 cup melted butter
- 3/4 cup sugar free organic apple juice
- 1 cup blackberries
- 2 tablespoons flaked almonds
Whisk flour, almond meal and baking powder into a large bowl. Make a well in the center and add the wet ingredients and berries. Mix until just combined. Spoon mixture into muffin cases. Sprinkle the flaked almonds over the top and bake in a 180 degree oven for 10-15 minutes. Oven temperatures vary so cooking time may be different. The best way to check if muffins are cooked through is to insert a toothpick or small skewer in the middle of the muffin. If the skewer comes out clean the muffins are ready.
