I would like to say that I am back to perfect health after my recent surgery but that would not be the truth. I am still recovering and whilst I have made massive strides it has not been quick enough for my liking 🙂 I have not had much of an appetite and have struggled to get back to eating full meals. I am pleased to say though that after cooking tonight I was hungry and ate more than I have in weeks (although according to my husband I should still eat more). These wings are delicious and are simple to prepare. If you are like me and don’t like your food too spicy you can substitute the Cayenne pepper and Chilli powder for smoked paprika. The longer you can marinate these wings the better the flavour. Overnight is best but a minimum would be 3-4 hours. Tonight I pan-fried some Asian greens and Enoki mushrooms and even managed to make a Garlic and Cheese cob loaf. Enjoy 🙂
Buffalo Wings
- 2 kg free range Chicken Wings (with wing tip removed)
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Chilli Powder
- 1 teaspoon Smoked Paprika
- 4 tablespoons Tamari or Soy Sayce
- 4 tablespoons Organic Honey
- (2 extra tablespoons Honey for glaze)
Combine marinade in a bowl. Pour over chicken wings and allow to marinate in the fridge overnight. Place marinated wings on a lined baking tray. Bake in a pre-heated 200 degree oven for 35-40 minutes (depending on the size of wings). Turn wings 2-3 times brushing when extra honey each time. A little warning though once you start eating it is hard to stop.
