All I can say is – yummy 🙂 These cookies are like carrot cake but they have a delicious crunchy outside like a cookie.  They would be perfect for breakfast on the run or for school lunch boxes.  They are refined sugar free to boot.  Once again if you are able to tolerate fats feel free to swap the apple sauce for coconut oil.

Ingredients
- 3/4 cup Wholemeal Plain Flour
- 1 cup Oats (I used quick oats as they are smaller)
- 1 1/2 teaspoons Baking Powder
- 2 teaspoons Cinnamon
- 1/2 teaspoon Mixed Spice
- 3/4 cup Grated Carrots
- 1/2 cup Maple Syrup or 1/4 cup Honey
- 1 Egg
- 2 tablespoons Apple Sauce
Preheat oven to 190 degrees.  In a mixing bowl combine the flour, oats, baking powder, cinnamon and mixed spice.  Stir until combined.  In a separate bowl whisk together the maple syrup, egg and apple sauce. Add the wet ingredients to the dry.  Add carrots and stir until just combined.  When making biscuits with oats you want them to soak up some of the moisture from the batter so leave the batter to sit on the bench for about 10 minutes (perfect amount of time to tidy the kitchen 🙂 ).  Roll tablespoons of mixture into balls and place on a lined baking sheet.  Bake for 12-15 minutes or until they just start to change colour.
