Who would of thought that five simple ingredients would make such a delicious little treat 🙂
Ingredients
- 1 1/2 cups Coconut
- 3 Egg Whites
- 1 large Carrot or 2/3 cup, grated
- 1 teaspoon Vanilla Bean Paste
- 1/2 cup Sugar

Combine all of the above ingredients in a bowl and roll tablespoons of mixture into balls. Bake in a 160 degree oven for 25-30 minutes or until golden and crispy on the outside but light and fluffy inside 🙂
