Muffins are a an excellent way of adding extra fruits and vegetable into your families diet. The trick is to be careful what else you add into them. By substituting white flour for wholemeal and sugar for honey you can make a healthier afternoon treat 🙂
Wholemeal Carrot & Sultana Muffins
- 1 1/2 cups wholemeal flour
- 1 teaspoon baking powder
- 1 teaspoon of cinnamon
- 1 teaspoon of mixed spice
- pinch of salt
- 6 tablespoons of melted butter
- 6 tablespoons of honey
- 1 egg
- 1 cup of sugar free apple sauce
- 3/4 cups of grated carrot
- 1/2 cup of sultanas
Pre-heat over to 108 degrees. Line muffin tray with baking paper or muffin cases. Whisk wet ingredients until smooth. Whisk through sifted dry ingredients until smooth. Gently fold through carrots and sultanas. Bake for 20 – 25 minutes until golden. Mixture should make 12 large muffins or 18 smaller muffins.
Enjoy with your afternoon tea or coffee. These muffins freeze very well. Just pop a frozen muffin directly into the microwave for 30 – 40 seconds.
