The hot weather is here and lighter meals are on the menu at our house. Tonight we are enjoying these lettuce cups. The recipe is pretty versatile and you can either use chicken or pork mince. The only thing I would say is make sure your buy a quality mince or if you have the time make your own using your food processor 🙂
- 500 grams Organic Free Range Chicken Mince
- 3 Shallots (thinly sliced)
- 2 Carrots (grated)
- 1 tablespoon minced Garlic
- 1 tablespoon grated Ginger
- 3 tablespoons Light Soy Sauce
- 2 tablespoons Kecap Manis
- 1 tablespoon Fish Sauce
- 1 teaspoon Coconut Sugar
- 1/4 teaspoon Chilli Powder
Brown mince in a non stick pan. Making sure to break up any lumps. Add garlic and ginger and cook for a further 2-3 minutes. In a small bowl combine soy sauce, kecap manis, fish sauce, coconut sugar and chilli powder. Pour over mince and allow to simmer for 5 minutes until sauce thickens. Just before serving add grated carrot and sliced shallots. Serve in lettuce leaves. Enjoy 🙂
