My ultimate comfort food is chicken schnitzel and mashed potato. By substituting a few ingredients I am still able to enjoy them.
Wholemeal Chicken Schnitzel
- 2 free range organic chicken breasts
- 2 cups wholemeal bread crumbs
- 2 tablespoons parmesan cheese
- 2 large eggs
- 1/2 cup wholemeal flour
- 1 teaspoon dried thyme
- oil for frying
Slice each chicken breast in half. Place between two sheets of baking paper or go between and flatten with a rolling pin. In a food processor process stale bread with parmesan and thyme until fine. Dip flattened breast in flour first, then into beaten eggs and finally into crumb mixture. I shallow fry in a non stick pan until browned. Enjoy 🙂
