Another dish that is delicious and quick to prepare. These patties are great with salad and home-made wedges or on a burger. Enjoy 🙂
Chicken & Sweet Potato Patties
- 1 large red onion
- 1 medium sweet potato
- 500 g free range organic chicken ( I prefer thighs )
- 1 large clove of garlic
- 1 teaspoon dried thyme
- 1 tablespoon tamari sauce
- 2 tablespoons wholemeal flour
- 1 egg
- fresh parsley
It is best to use a food processor for this dish but if you don’t have one grate the onion and sweet potato and finely dice the chicken. When using a food processor use the coarse grater to grate the sweet potato and onion. When grated remove from processor and put in a mixing bowl. Using a blade process the chicken until a smooth paste. Add the garlic and thyme. Pulse until combined. Add the chicken mix to the sweet potato and onion. Add wholemeal flour, parsley, beaten egg and tamari sauce. Using your hands mix until well combined. Allow to sit in the fridge for 10-15 minutes until mixture becomes a bit firmer. Spoon large spoonfuls of mixture into a hot non stick pan sprayed with oil. Cook patties on each side for approximately 6 minutes or until golden brown.
I love these patties with a side salad and a dollop of organic sour cream. If you like a kick to your food you can add 1 teaspoon of dried chilli.
