As promised here is the chocolate version of the microwave mug pudding. You can add chocolate chips or 1/8 teaspoon of peppermint essence for an added twist.
Chocolate Pudding
This recipe makes 2 large mugs or three small
- 4 tablespoons wholemeal or gluten free self raising flour
- 3 tablespoons maple syrup or honey
- 2 tablespoons dutch cocoa
- 2 eggs
- 2 tablespoons milk (any variety if fine I have used Rice/Almond/Lactose Free)
- 2 tablespoons oil (I personally prefer Organic Rice Bran Oil)
Combine all the above ingredients in a bowl and mix until well combined. Divide mixture between two coffee mugs or three smaller glasses. Place in the microwave and cook on high for 1 minute. Test with a wooden skewer to see if cooked through. Cook for a further 20-40 seconds depending on your microwave. We love it when there is a bit of uncooked mixture on the bottom of the glass to make this cake more of a self saucing pudding 🙂 Serve with a scoop of vanilla ice cream. Enjoy 🙂
