My Mum always baked us delicious treats for our school lunch boxes and this chocolate slice was something that was a favourite.
I am ashamed to admit that I used to trade my home-made goodies for processed treats. I’d swap chocolate slice with home-made marshmallow top for a little container of Nutella or Cornflake cookies for a fruit Roll Up. I used to crave the processed foods that my friends had in their lunch boxes. It wasn’t until I got older that I realised how lucky we were to have a Mum who had the time, ability and inclination to make sure we always had home-made foods.
180 grams of Melted Butter
1/3 cup of Coconut Sugar
3 tablespoons Cocoa Powder
1 cup of desiccated Coconut
1 cup of Plain Flour (I have used Coconut Flour before to make this slice GF just add a little extra liquid)
Combine all ingredients in a bowl. Press mixture into a lined slice tray and bake in a 160 degree oven for 30-40 minutes. Allow slice to cool completely. For the icing combine 1 teaspoon of butter with 1 tablespoon of hot water and stir until butter is melted. Stir in 1 tablespoon of Cocoa Powder and 1 Cup of Icing Sugar. Pour over slice and sprinkle with some extra Coconut. Allow icing to set before serving.
