I have been happily playing around with some recipes lately and adapting them to suit my dietary requirements. Unfortunately the list of foods that I cannot eat is quite long and seems to grow by the day. One ingredient that I absolutely love but cannot eat a lot of is Coconut. Coconut is naturally high in fibre which aids in digestion, it’s a great source of healthy fats and is also rich in essential vitamins and minerals.
My good friends Mother recently underwent surgery so as a special treat I made these muffins for her. I knew if I made them specifically for someone I would not sneak a few muffins and inevitably pay for it for many days to come.

Ingredients
- 150 grams Butter
- 2/3 cup Honey or Raw Caster Sugar
- 1 teaspoon Vanilla Paste
- 3 Eggs
- 1 cup Plain Flour
- 1 1/4 cups Coconut
- 1 teaspoon Baking Powder
- 1/4 cup Coconut Milk or Cream
Pre heat oven to 180 degrees. Beat honey and butter using an electric mixer until creamy. Add eggs 1 at a time, making sure to mix well after each addition. Add remaining ingredients and gently stir until just combined. Spoon batter into muffin cases (this mixture makes 12 muffins). It’s at this point that you can add whatever fruit or extra flavouring that you like – raspberries, blueberries, dates, chocolate chips or even caramel pieces if you are looking for something extra indulgent. Bake for 20-25 minutes or until lightly browned. You will know when they are ready – you house will smell of delicious coconut.
