Today was the first day that I ventured back into my kitchen in close to three months and I must admit that even though baking a cake has left me exhausted I didn’t realise how much I missed baking.  Enjoy 🙂
Coffee & Walnut Cake
- 30 grams butter
- 1 tablespoon maple syrup
- 2 cups walnuts
- 2 teaspoons cinnamon
Melt butter in a small saucepan. Â Add maple syrup, cinnamon and walnuts. Â Stir over a low heat for 2-3 minutes then allow to cool.
- 1/2 cup milk
- 1 tablespoon coffee granules
- 175 grams butter
- 1 cup maple syrup
- 3 eggs
- 1 3/4 cups wholemeal flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Pre heat over to 160 degrees. Â Combine milk and coffee in a small bowl and stir until coffee dissolves. Â Using an electric beater beat butter and maple syrup until light and fluffy. Â Beat in eggs one at a time. Â Sift in flour, baking powder and baking soda. Â Pour in milk and continue to mix using electric beaters until mixture is smooth. Â Pour half of the batter into a greased bundt pan. Â Sprinkle over half of the walnut mixture and then cover with remaining batter and bake for 45 minutes.
Remove cake from pan and allow to cool completely. Â Ice with cream cheese frosting and dust with cinnamon. Â Sprinkle remaining nuts over the top.
This cake is great for afternoon tea or dessert.
