This is the first time I have made corn bread. I was not sure if it was a savoury or a sweet bread – I quickly discovered it could be both 🙂 It is delicious with a casserole or warmed with some butter and honey. Enjoy 🙂
Corn Bread
- 1 cup wholemeal flour
- 3/4 cup organic polenta
- 2 tablespoons honey
- 2 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/4 cup rice bran oil
In a mixing bowl combine all dry ingredients. In a smaller bowl combine wet ingredients and whisk until smooth. Pour wet ingredients into dry and stir until just combined (mixture will not be smooth). Pour batter into a lined baking tin and bake for 25-30 minutes.
