Corn fritters are delicious on their own with some sour cream or as a side dish. The fresher your corn cobs the crunchier they will be. Enjoy 🙂
Corn Fritters
- 3 corn cobs (husk and silk removed)
- 1 diced red onion
- 1/4 cup thinly sliced coriander
- 3/4 cup wholemeal flour
- 3/4 teaspoon baking powder
- 2 eggs, lightly beaten
- 1/2 cup milk
In a large saucepan boil corn cobs for 3-5 minutes. Remove and allow to cool slightly. Using a sharp knife run the blade down the cobs to remove all the kernels. In a large bowls break apart kernels. Stir through diced onion and coriander. Add flour and baking powder, stirring to make sure kernels are evenly coated in flour. Add beaten egg and milk. Stir with a wooden spoon until combined. Cook fritters in a non stick pan with 1/4 cup rice bran oil. If you are having the fritters on their own as a meal you can add bacon for extra flavour. Tonight we had them with grilled Porterhouse steak and salad.
