I grew up eating these biscuits and love them to bits. Unfortunately for me I have yet to find a substitute for the butter that works so I am unable to eat them. The rest of the family however can indulge and do so regularly 🙂
- 6 tablespoons quality butter
- 1/4 cup honey or coconut sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup of wholemeal self raising flour or 1 cup of plain Atta flour with 1 heaped teaspoon of baking powder ( I use Atta flour)
- 1/2 cup organic sultanas (optional)
- 1 cup of cornflakes (it is your choice if you want to go sugar free but I’ll be honest they are hard to find and my girls don’t like them so we stick with Kellogs)
Cream butter and honey until smooth. Add egg and vanilla and continue to whisk until combined. Add chosen flour and sultanas then gently stir until combined. Roll tablespoons of mixture into cornflakes then bake in a 180 degree oven for 12-15 minutes. These biscuits freeze well and will last in the pantry for 3 days but I wish you luck 🙂 I struggle to get them to last one day.
As with anything portion control is important and the batch of mixture should make 12-15 biscuits.
