Another delicious cake to try 🙂 It is made with wholemeal flour and has no sugar.  Enjoy 🙂
Cranberry, Orange & Coconut Cake
- 1/4 cup fresh orange juice
- 200 g unsweetened cranberries
In a small saucepan simmer cranberries and orange juice until all liquid is absorbed. Â Allow to cool.
- 2 tablespoons finely grated orange zest
- 1/2 cup pure maple syrup
- 3/4 cup butter
- 4 eggs
- 1 teaspoon vanilla
- 2 2/3 cups wholemeal flour
- 2 teaspoons baking powder
- 2 teaspoons bi carb soda
- 1 cup organic coconut cream (sugar-free)
- 1 cup coconut
In a large mixing bowl whisk together butter, maple syrup, vanilla and orange zest until fluffy. Â Whisk in eggs one at a time. Add coconut and coconut cream. Â Whisk in flour, baking powder and bi carb soda until well combined. Â Stir through cranberries. Â Pour batter into a lined baking tray and bake in a 180 degree oven for 40-50 minutes. Â Sprinkle with coconut and serve warm.
