If you love coffee then you will absolutely love these cupcakes 🙂
I love coffee but I’m a bit of a lightweight and cannot handle anything too strong so I stick to my usual drinking coffee granules to make these cupcakes.
However if you are a bit more of a die-hard coffee drinker feel free to add another tablespoon to the recipe or even add some of your favourite flavoured coffee.
2 cups of Self Raising Flour
1/2 cup of Caster Sugar (or sugar substitute if you are sugar-free)
1 teaspoon of Cinnamon
1 1/4 cups of Milk
2 tablespoon of Coffee
60 grams of Butter (melted)
1 Egg
1 teaspoon of Vanilla Extract
- Combine melted butter with caster sugar, coffee granules, cinnamon and vanilla extract. Â Whisk until sugar is dissolved (2-4 minutes).
- Add egg and milk and continue to whisk until mixture is light and fluffy.
- Fold flour into the mixture one cup at a time.
- Spoon batter into a prepared muffin tin. Â Bake in a 180 degree oven for 20-25 minutes. Â Allow to cool completely before icing.
I make a simple Cream Cheese Icing for these cupcakes. Â Simply combine 2 heaped tablespoon of cream cheese with 1 cup of icing sugar and 1 teaspoon of milk in a small food processor. Â Process until smooth. Â For a mocha flavour add 1 teaspoon of cocoa.
