As a family we love Christmas because we have an excuse to eat our body weight in Gingerbread Men. However, Christmas is still many months away and the girls and I really wanted gingerbread. After much searching and a lot of time wasting I thought I would alter a Vanilla Loaf Cake recipe to help ease the pain of waiting months to satisfy our craving 🙂
Once again the instructions are for a Thermomix but you can easily make this on the stove top and with a bench mixer or hand held mixers.
Preheat your oven to 170 degrees and line a loaf tin with baking paper.
Add the below ingredients to your bowl and cook for 5 minutes/ 60 degrees/ speed 2.
- 125 grams Butter
- 80 grams Golden Syrup
- 80 grams Molasses (if you don’t have molasses just use 160 grams of Golden Syrup)
- 100 grams Brown Sugar
- 1/2 teaspoon Bi Carb Soda
Once the butter has melted and the sugar has dissolved add the below ingredients to your bowl and mix for 20 seconds/ speed 4.
- 230 grams Plain Flour
- 1 tablespoon Ground Ginger
- 1 teaspoon Mixed Spice
- 1 teaspoon Cinnamon
- 2 Eggs
- 30 grams Milk
Bake for 45 minutes to 1 hour depending on your oven. Enjoy warm on its own or slathered in butter 🙂
