This recipe is something that my Mum passed down to me a long time ago. We grew up eating these dumplings and I will not try any others because I just know that they will not compare. Yes they do contain sugar but as we only eat them once in a blue moon I’m not too concerned 🙂 I promise if you try them you will love them too.
The recipe is split into two stages. Firstly in a large saucepan combine 1 cup of hot water with 1/2 cup of sugar (any sugar you prefer caster, coconut, raw etc.), 1 tablespoon of butter and 4 tablespoons of golden syrup. Bring to a simmer stirring occasionally to ensure the sugar dissolves.
In a separate bowl rub 1 tablespoon of butter into 1 cup of self raising flour (using your fingertips) until the mixture resembles bread crumbs. Add 1 beaten egg and 1/4 cup of milk 1 tablespoon at a time until mixture forms a soft dough. Roll mixture into dumplings the size of a walnut. Drop the dumplings into the simmering syrup mixture. Cover and simmer on a medium heat for 15-20 minutes.
Dumplings will puff up and become golden. Serve with warm custard or a scoop of vanilla ice cream.
