Hash Brown Potato & Sweet Potato Bake
- 4 large potatoes (grated)
- 1 large sweet potato (grated)
- 1 red onion (diced)
- 1 clove garlic (minced)
- 6 tablespoons quality butter
- 4 tablespoons wholemeal flour
- 1 1/2 cups milk
- 1 1/2 cups grated cheese (cheddar)
- 1/2 cup cheese (topping)
Pre-heat oven to 190 degrees. In a non stick fry pan melt butter. Saute diced onion until soft. Add garlic and saute for a further 2 minutes. Add flour to butter and stir until mixture darkens in colour. Whisk in milk and continuously stir until thickened. Stir in grated cheese until melted and remove from heat. Add grated potatoes to saucepan and stir with a wooden spoon until potatoes are evenly coated. Pour mixture into baking dish and smooth top with a spoon. Sprinkle with remaining cheese and bake for 35-40 minutes until browned.
You can also add grated carrot, zucchini, pumpkin or eggplant to this dish. I use a food processor to grate the vegetables so that they are of uniform shape. Enjoy 🙂
