The hot weather has officially arrived in Queensland and hot foods are now off the menu.
My girls get to pick a treat once a week and tonight my eldest asked for Icy Strawberry Mouse.
Not only does it just have 4 ingredients, it takes about 5 minutes to make and it’s refined sugar-free – winning 🙂
Ingredients
- 200 grams frozen Strawberries
- 2 Egg Whites
- 75 grams Plain Green Yoghurt
- 1 teaspoon Honey (optional)
Instructions
Using a food processor or high powered blender blend your frozen strawberries until they are completely broken down. Depending on the power of your machine this can take up to 1 minute. Add your egg whites, yoghurt and honey. Continue to blend until the mixture becomes light and fluffy (2-3 minutes). Pour the mixture into glasses and pop into the freezer for a minimum of 12 hour. To jazz them up a little you can top with strawberries and cream or some grated chocolate. Personally I prefer them plain 🙂

Place strawberries in bowl and chop for 10 seconds/speed 6. Scrape down the edges and insert butterfly. Add eggs whites, honey and yoghurt. Mix 2 minutes/speed4.
Extra Tip – I buy strawberries when they taste the best and freeze as many as I can fit in the freezer. If you are using the commercial frozen strawberries you will more than likely need to add the honey.
