I have been craving donuts for weeks now and I nearly caved last week and bought a Jam Donut from Donut King. Luckily for me (and for my Pancreas too) they did not have any left. So this morning the girls and I set out to make oven baked Jam Donuts. I must say that even though they are not as good as a fried one they come pretty close 🙂
The trick to getting a fluffier oven baked Donut is to use regular plain flour rather than bakers flour. Bakers flour is great if you are planning on frying though. You can mix the dough by hand or in a stand mixer.
Ingredients
- 220 ml Milk
- 60 grams Caster Sugar
- 75 grams Butter
- 1 tablespoon Active Dry Yeast
- 500 grams Plain Flour
- 1 Egg
- pinch of salt
In a small saucepan combine Milk, Sugar and Yeast. Stir until it reaches 37 degrees. Do not allow the mixture to boil or get above 37 degrees or you will kill the yeast. Remove from the heat and add the butter in small chunks and stir until melted. Add flour, egg and salt. Knead until smooth. Place dough in a greased bowl and let it rest until doubled in size (1-2 hours). Once dough has risen take out the bowl and gently flatten on a floured surface. Using a cookie cutter or a glass cup cut circles of dough and place on a lined baking tray. Once again allow the dough to rest and double in size.
Pre heat your oven to 195 degrees. Once donuts have risen for the final time place in your oven and cook until golden (15-20 minutes).
Once cooked brush with melted butter and roll in caster sugar. When cooled pipe some of your favourite jam into the centre.
These donuts do freeze but only if you have any leftovers 🙂
