It is raining here toady and a bit cool so this lemon bread was perfect for morning tea with a cup of coffee. Enjoy 🙂
Lemon Bread
- 1 3/4 cup wholemeal flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup maple syrup
- 1 egg, lightly beaten
- 1 cup milk
- 1/4 cup melted butter
- 2 teaspoons lemon zest
- 2 tablespoons lemon juice
- 1/2 cup organic sultanas
Sift flour, salt and baking powder into a large mixing bowl. Whisk in maple syrup, egg, milk, butter, lemon juice and lemon zest until smooth. Fold through sultanas. Pour batter into a loaf tin and bake in 180 degree oven for 45-50 minutes. You can also add walnuts or pecans to this recipe if you would like some extra crunch.
