My husband and daughter love and I mean LOVE Kentucky Fried Chicken. But even when I could eat fried foods KFC would have been on the bottom of my list for takeout. It always left me feeling sick and strangely thirsty.
I have tried many times to recreate the secret herbs and spices and this recipe would have to be the closest I have ever gotten. I will pre-warn you that no matter what spices, quantities or cooking method you use you will never be able to replicate KFC’s recipe. They use MSG in their seasoning and cook the chicken following a completely different method. If you are happy with a healthier and still delicious substitute then give this a go 🙂
I double or triple this recipe to make a large batch of seasoning and store it in a glass jar in the pantry and add 2 tablespoons per 1 cup of plain flour when you are ready to create heaven on a plate 🙂
For juicy chicken soak the pieces overnight in buttermilk or a brine solution.
You can either air fry, oven bake or shallow fry the chicken. We use tenderloins because they cook quicker but you can use breast, leg, thigh, wing and bone in or out. If you leave the bone in make sure to cook a little longer or use a thermometer to check they are cooked through.
Ingredients
- 1 cup Rice Flour
- 1 tablespoon Salt
- 1 teaspoon White Pepper
- 2 tablespoons Onion Powder
- 1 tablespoon Dried Garlic
- 2 teaspoons Dried Tarragon
- 2 tablespoon Sweet Paprika
- 2 teaspoons Dried Thyme
- 2 teaspoons Dried Rosemary
- 2 teaspoons Dried Oregano
- 2 teaspoons Dried Mustard
- 1 teaspoon Dried Chilli (optional)
Add all the ingredients to your Thermomix or food processor and mix at high speed for 10-20 seconds 🙂
If you are soaking your chicken overnight in butter milk drain off the excess milk and dredge chicken pieces through seasoning. Spray with oil and air fry or bake for 25-30 minutes (depending on the size of chicken and your oven).
If you are soaking in brine or coating straight from the tray dredge chicken though plain flour, egg wash then the seasoning.
Whatever you do make sure you cook extra because they will disappear 🙂
