I am the only one in my family who eats this recipe so if you are making for more than two people you will need to double the ingredients. Don’t let the fact that I am the only one who eats it put you off the rest of my family just prefers plain pork chops 🙂
Maple & Balsamic Pork Chops
- 2 pork loin chops (fat trimmed)
- 2 small red potatoes (cut into wedges skin on)
- 2 small granny smith apples (cut into wedges)
- 1/4 cup maple syrup
- 1/4 cup balsamic vinegar
I par cook my potatoes in a pot of simmering water for 6 minutes. In a large non stick pan fry off pork chops until nicely browned and caramelized. Remove pork from pan and allow to rest on a plate. Add potatoes and apples to pan and stir with a wooden spoon – making sure to lift all the goodies off the bottom of the pan. Allow to fry for 3-5 minutes. Add balsamic vinegar and maple syrup. Allow to simmer for 1-2 minutes then add pork chops back to pan. The sauce will start to reduce at this point so be careful that you don’t let it burn. When pork chops are evenly coated with glaze remove from pan and serve with steamed vegetables.
