I love a meal that can be put together in 30 minutes and only uses one pot.
This recipe makes a large batch so another added bonus is there will be leftovers for lunch the next day 🙂
I’m not a fan of spicy food so this recipe is quite mild. If you love a bit more spice in your life feel free to add more cumin and some dried chili powder or fresh chili too.
Ingredients
- 1 brown onion, diced
- 2 cloves garlic, diced
- 1 red capsicum, diced
- olive oil
- 1/2 cup fresh or frozen corn
- 1/2 cup frozen peas
- 1 tin black beans
- 500 grams beef, turkey or chicken mince
- 2 teaspoons cumin
- 1 teaspoon smoked paprika
- 1 tablespoon tomato paste
- 1 tin diced tomatoes
- 1 cup long grain or Basmati rice
- 2 cups of Chicken Stock (I use a stock paste and add 2 tablespoons to a jug with 2 cups of water)
In a large pan saute onion and garlic in some olive oil. Once the onion becomes translucent add the capsicum and cook for another few minutes.
Add the mince to the pan and cook until browned using a wooden spoon to break up any lumps in the meat. Season with salt and pepper. If you are using a fatty mince be sure to drain off any excess liquid or fat from the pan.
Make a hole in the centre of the pan by pushing the meat to the outer edges. Add a little extra oil oil and then the rice. Stir until rice in evenly coated in oil then saute until golden.
Add beans, peas, corn, canned tomatoes, tomato paste, chicken stock, cumin and paprika. Stir until combined then bring to a simmer. Once simmering cover pan and allow to cook on low for 12-15 minutes or until rice is tender (stirring every 5 minutes to make sure the rice does not catch).

When cooking this dish it is best made in a large pan with a lid. If you do not have a pot or pan large enough with a lid just use some alfoil 🙂
