I love passionfruit slice but all of my recipes call for sweetened condensed milk. I have not been able to find a substitute yet so I decided to give this passionfruit cake recipe a go. It is light, fluffy and delicious. Enjoy 🙂
Passionfruit Cake
- 125 g quality butter
- 1/2 cup maple syrup
- 2 eggs
- 2 cups wholemeal atta flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons bi carb soda
- 1/2 cup milk
- pulp of 4-6 passionfruit
Whisk butter and maple syrup until smooth and fluffy. Beat eggs in one at a time until combined. Add flour, bi carb, milk and baking soda. Continue to whisk until well combined. Gently fold through passionfruit pulp. Pour batter into a lined cake tin and bake in a 180 degree oven for 40 minutes or until golden. Enjoy 🙂
