There is nothing better on a cool rainy day than a bowl of soup and fresh crusty bread rolls. We regularly buy a leg of ham as it is much healthier than deli ham and if you shop around you are able to buy organic stall free ham for a reasonable price. Soup does take a while to cook but it is well worth the effort. Soaking the split peas overnight reduces the cooking time. This soup also freezes very well and can be kept for up to 3 months. Enjoy 🙂
Pea & Ham Soup
- 1 packet of yellow split peas (soaked overnight to reduce cooking time)
- 1 ham hock
- 2 medium onions
- 2 carrots
- 1 cup frozen peas
- 2 tablespoons soy sauce
Drain split peas and run underneath water for 2-3 minutes until water runs clean. Tip peas into a large soup pot. Add ham hock, diced carrot and quartered onions. Add water until hock is covered. Bring to boil and allow to simmer for a minimum of 1 hour. Split peas will being to dissolve and ham will fall of the bone. Remove ham hock from pot. Using 2 forks remove all ham and then chop into chunks. Discard bones and outer skin. Using a hand mixer blend soup until smooth and thick. Add ham back to pot with frozen peas. Simmer for a further 5 minutes then taste. Some ham is saltier than others so it is a good idea to taste before adding soy sauce. Add soy sauce and simmer for a further 5 minutes. Serve with crusty home-made bread rolls.
