After being on my feet all day today the last thing I felt like doing was cooking dinner. Unfortunately my freezer is empty so re-heating some left overs was not an option. This stir fry is quick and delicious. Enjoy 🙂
Pork, Bean and Wombok Stir Fry
- 500 g quality Pork Mince (nothing added just 100 % Pork)
- green beans (trimmed and halved)
- capsicum (thinly sliced)
- 2 shallots (thinly sliced)
- 2 garlic cloves (crushed)
- 3 tablespoons Tamari sauce
- 1 tablespoon pure honey
- 2 cups of wombok (thinly sliced)
- 1 tablespoon sesame seeds
In a large wok heat 1 tablespoon of rice bran oil and stir fry mince until brown. Make sure you break up the mince as it cooks. Once mince is browned add garlic, white ends of spring onions and capsicum. In a small bowl combine the Tamari and honey. Pour over mince and stir until evenly coated. When mince is coated in sauce add beans and wombok. Continue to stir fry for a further 2-3 minutes. Add green part of spring onion and sesame seeds. This stir fry can be eaten on its own or with brown rice. For something different spoon stir fry into lettuce leaves and fold to make a parcel.
