We are getting a little bit tired of eating our Christmas Ham so for something different I made this potato, sweet potato and ham pie (well really it’s a quiche without pastry but sounds more fancy when you call it a pie 🙂 ) It is also great for using up any leftover roast vegetables you may have in the fridge. Feel free to add any of your favourite vegetables to the recipe, it is beautiful with a layer of spinach too.
- 4 Dutch Potatoes (if not dutch any waxy potato is fine)
- 1 Sweet Potato
- 1 Cup Diced Ham
- 1 Red Onion
- 6-8 Eggs
- 1/4 Cup Milk
- Salt, Pepper, Oil and Paprika for frying potatoes.
If you are not using leftover roast vegetables thinly slice potato, sweet potato and onion. Steam in the microwave until just tender. Remove from microwave and sprinkle with some paprika then pan fry until browned (this step is not absolutely necessary but gives the dish heaps more flavour). Remove potatoes from pan then fry onion until softened. Add ham and cook for a further 3-5 minutes.
By cooking everything before you guarantee that the potatoes are cooked and as a bonus it will taste better too. Spray a baking dish with some oil. Layer potatoes on the bottom of the dish then the onion and ham mixture. Finally layer the sweet potatoes on top – you don’t need to worry about being neat it all tastes the same. In a separate bowl whisk together eggs, milk and add as little or much salt and pepper as you prefer. Bake in a 180 degree oven for 45-50 minutes or until firm to the touch. Serve warm with salad. This pie is also delicious cold and will last up to 3 days in the fridge. Enjoy 🙂
