I am still having difficulty eating red meat in large portions and I am afraid that I am going to start looking like a chicken so we are trying to eat a different protein each night of the week. Last night we had these delicious and simple prawn skewers. - 24 prawns (de-veined and peeled)
- 2 tablespoons wine vinegar (red or white whatever you have on hand)
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoons sesame seeds
Soak 6 bamboo skewers for a minimum of 30 minutes to prevent them from burning. Thread prawns on skewers. Combine marinade and then allow prawns to soak for 15 minutes. Pour off excess marinade into a bowl then sprinkle sesame seeds over skewers. Fry in a large non stick pan or griddle basting each side with leftover marinade as you turn. Serve with rice.
