Pumpkin is one of the most versatile vegetables. It can be used in sweet and savoury dishes. I could eat pumpkin every day and never get sick of it. This pumpkin bake is one of my favourites. I have used the basic recipe tonight but you can add anything from grated zucchini, pasta or diced chicken breast to this dish. If you like your food spicy you can add chilli flakes or even some curry powder. Enjoy 🙂
Pumpkin Bake
- 3-4 cups mashed pumpkin (fresh or left overs from the night before)
- 1 small red onion, diced
- 2 rashes organic bacon, diced
- 1 teaspoon minced garlic
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 3/4 cup grated mozzarella cheese
Gently sautee onion, garlic and bacon in a pan until onion is softened and bacon is cooked. In a large mixing bowl combine mashed pumpkin, bacon mix, smoked paprika and salt. Pour mixture into a baking dish and smooth the top. Sprinkle cheese over the top and bake in a 180 degree oven until cheese and browned and bubbling. Serve with steamed greens.
