This slice can be made with any fruit that you have on hand. I love it with raspberries the most but it is great with apples as well. I use frozen berries when I am not able to get fresh. If using fresh apples or pears par boil or cover sliced fruit in a microwave safe bowl and microwave for 2-3 minutes until softened. When using a plainer fruit like apples and pears add some spices (cinnamon, nutmeg or ginger). Enjoy 🙂
Raspberry Crumble Slice
- 160 g cold butter
- 2 cups wholemeal flour
- 2 teaspoons baking powder
- 1/2 teaspoon bi carb soda
- 1/3 cup unsweetened coconut
- 1/2 cup maple syrup
- 1 egg
- 400 g raspberries
- 1 tablespoon lemon juice
- 3 tablespoons corn flour
- 1 – 1/2 tablespoons maple syrup
- 1/4 cup shredded coconut (topping)
- 1/4 cup slivered almonds (topping)
I use a food processor to make the slice for this recipe. You can use an electric mixer just be careful not to over beat the batter. Place flour, coconut, baking powder and bi carb into the food processor. Add butter and process until mixture resembles bread crumbs. Add the maple syrup and egg. Continue to process until mixture is combined. Press mixture into a lined slice tray. In a separate bowl combine the raspberries, cornflour, lemon juice and extra maple syrup. Gently stir until raspberries are evenly coated. Smooth raspberries over slice until they form an even layer. Combine the shredded coconut and slivered almonds and sprinkle over the top of the raspberries. Bake in a 180 degree oven for 40 minutes. This slice freezes very well.
