Even though the disgusting hot weather has finally decided to leave us some nights the last thing I feel like is a massive hot meal.
San Choy Bow is perfect for those nights. Not only is it quick and easy to prepare it’s a one pot wonder. So less washing up 🙂
We alternate between Pork and Chicken San Chow Bow but it honestly comes down to personal taste. If you don’t like Pork you can substitute Chicken or Turkey mince.
- 500 grams lean Mince
- 2 tablespoon Rice Bran Oil or Non GM Canola Oil
- 1 medium Brown Onion, diced
- 3 Spring Onions, thinly sliced
- 1 teaspoon fresh grated Ginger
- 1 teaspoon minced Garlic
- 1 large Carrot, grated
- 1/4 cup Mirin or Chinese Cooking Wine
- 1/4 cup Soy Sauce
- 1/4 cup Oyster Sauce
- 2 tablespoon Honey
- 1/4 cup of Water with 1 tablespoon of Cornflour
In a wok or large fry pan cook onion over a medium heat until softened. Add garlic, ginger and carrot and continue to cook for a further 2-3 minutes. Turn the heat up to high and add the mince to the pan and cook. Making sure to break up any large clumps of meat. In a separate bowl combine the Mirin, Soy Sauce, Oyster Sauce and Honey. Pour over mince and allow to cook for a further 5 minutes. Add the thinly sliced spring onions. Just before serving pour over the combined water and cornflour. Continue to stir over a high heat until the sauce thickens and becomes glossy.
Serve immediately in lettuce cups.
My girls like to have the mince in wraps with shredded lettuce.
