I have always loved making bread and apple scrolls would have to be one of my all time favourites. Making bread can be very time consuming but the end result is delicious and as an added bonus you know exactly what is in it. After years of making bread by hand my husband took sympathy and bought me a bread maker ( to this day I am not sure if it was for me or for him 🙂 ). I use it to make everything from pizza dough, pasta dough and of course bread. This recipe is for a bread maker. Enjoy 🙂
Sticky Apple Cinnamon Scrolls
Bread
- 285 ml warm water
- 1 teaspoon salt
- 2 tablespoons pure honey
- 4 cups wholemeal flour
- 2 eggs
- 60 g butter
- 3 teaspoons yeast
- 1 teaspoon each of cinnamon, all spice and nutmeg
Filling
- 2 granny smith apples (peeled and diced)
- 1 teaspoon cinnamon
- 3 tablespoons melted butter
Glaze
- 1/4 cup maple syrup
Add ingredients into bowl of bread maker in the order specified. Set bread maker to Dough – Bread and allow to knead and prove.
Meanwhile place diced apples and cinnamon in a microwave safe bowl with 2 tablespoons of water. Cover with plastic wrap and microwave for 3 minutes until softened. Allow to cool – if you use hot apples the dough with become soggy.
Roll dough out into a rectangular shape. Brush dough with melted butter and sprinkle with some extra cinnamon. Sprinkle apples over dough making sure to leave a 5 cm gap at the top and bottom. Roll up width-wise and cut into 4 cm pieces. Place 4 cm apart in a lined lamington tin. Cover loosely with plastic wrap and stand in a warm area for 30-45 minutes until doubled in size. Bake in a 180 degree oven for 25-30 minutes until golden. Remove from oven and brush with maple syrup while hot.
Fresh home made bread is best eaten on the day it is made but that will not be a problem with these. Enjoy 🙂
