If you are looking for a quick dessert to keep you warm on a winters night but your freezer is bare then this is perfect. My girls love the Chocolate Microwave Cake but Sticky Date is my all time favourite. Enjoy 🙂
Sticky Date Pudding
- 10 dates (organic)
- 3 tablespoons of boiling water
Roughly chop the dates and divide between two coffee mugs and pour 1 1/2 tablespoons of boiling water in each mug. Microwave dates for 30 seconds and then add a pinch of bi carb to each mug and allow to sit for at least 30 seconds (mixture will froth in the glass). In a separate bowl combine the following ingredients
- 1 1/2 tablespoons melted butter
- 2 tablespoons maple syrup
- 3 tablespoons wholemeal self raising flour
- 1 egg
- 1 tablespoon walnuts (optional)
Mash dates in the mugs and then divide batter between glasses. Combine the batter and the dates by running a knife around the edges and through the center of the glass. Place in the microwave and cook for 1 1/2 minutes. Enjoy with a scoop of home made vanilla ice cream.
