After my low sugar Iced Tea post yesterday I’m betraying my principals to post this sugar filled treat today.
In my defence it’s almost Christmas and if you pick a time of year to indulge it should be now 🙂
Sugared Peanuts were a special treat when I was younger and I am pretty peeved that I am unable to indulge but just making them is enough to bring back happy memories.
In a heavy based saucepan combine 2 cups of sugar (yes 2 cups) with 1 cup of water and 1 bottle of red gel food colouring.
Stir over a high heat until the sugar is dissolved and the mixture is just coming to the boil.
Add 500 grams of salted peanuts.
Bring back to the boil making sure to stir constantly. Continue to stir over a high heat until there is no excess liquid remaining. Tip nuts out onto lined baking trays and allow to dry before storing in glass jars or air tight plastic containers.
Be warned though there is no sneaking any of these are there will be evidence – not only on your fingers but your teeth too 🙂
