I love vegetables. This comes in handy because I can eat them when I am unable to stomach anything else.
My girls love certain vegetables – potato, broccoli, carrots and plenty of salad greens. Unfortunately they have not inherited my love of Sweet Potato 🙁
I keep trying to entice them but so far I have failed. Today’s attempt is Sweet Potato Dinner Rolls 🙂
I used a Potato Roll recipe from an old recipe book and cut out the sugar, shortening and swapped potato for Sweet Potato.
Ingredients
- 250 grams Sweet Potato (peeled, steamed, mashed and cooled)
- 150 grams Water
- 1.5 teaspoons Yeast
- 375 grams Wholemeal Bakers Flour
- 1 tablespoon Olive Oil
- 1 tablespoon Honey
- 1 teaspoon Salt
In a large mixing bowl whisk the sweet potato and water together until light and bubbly. Add the yeast and let the mixture sit on the bench for 5 minutes. Once the yeast activates and bubbles start to form add the remaining ingredients in the order listed and stir until combined. Tip dough out onto a lightly floured board and knead for 5 minutes until smooth and elastic. If the dough is too sticky add 1/4 cup of bakers flour at a time until you are able to knead the dough without it sticking to your hands.
Place dough back into bowl, cover with cling wrap and allow to rest for 30-40 minutes or until doubled in size. Uncover dough and punch the air out. Divide the dough into 12 equal portions then roll into balls. Place on a lined baking tray, cover with cling wrap and allow to rest for a further 30 minutes.
Uncover dough and bake in a 190 degree oven for 30 minutes. Rolls will sound hollow when tapped.

TMX Instructions
Add 1000 grams of water to thermomix bowl. Put diced sweet potato in the steaming basket and cook 15 minutes/varoma/speed 2.
Allow sweet potato to cool slightly.
Remove water from bowl and insert butterfly.
Place potato into bowl and mash for 30 seconds/speed 4 until smooth. Add 150 grams of water and mash for 20 seconds/speed 4.
Remove butterfly. Add remaining ingredients and knead on dough setting for 3 minutes. Once again if dough is sticky add 1/4 cup of flour until dough comes away from the edge of the bowl.
Remove dough from bowl and follow instructions as above.
