Another delicious soup that can be put together in the morning and left all day in the slow cooker. I saute the Leek before I add it to the pot but if you are time poor you can just add it raw and the end result is still delicious. The soup is very thick and is quite filling. My family has no idea that this recipe contains chick peas and I promise you yours will not be able to taste them. Enjoy 🙂
Sweet Potato Soup
- 2 large sweet potatoes
- 275 grams chick peas
- 1 leek
- 4 cloves garlic, minced
- 2 cups organic vegetable stock
- 1 cup hot water
- 1/2 cup sour cream (to add just before serving)
Gently saute thinly sliced leek and garlic in a small non stick pan. Peel and dice sweet potatoes. Add all the ingredients to your slow cooker and stir until combined. Cover and cook on a low setting for 6-8 hours. Using a stick blender puree soup until smooth. Add sour cream and continue to process until smooth and creamy. I love Kale chips with this soup and they are quick to make and add a different texture. Simply strip leaves from stalk and spray with olive oil. Bake in a hot oven until crispy. Sprinkle with salt when cooled.
