Instead of buying your Teriyaki sauce in a jar give this simple recipe a go. As an added benefit you place it in the slow cooker and then forget about it until dinner time. It is gluten and refined sugar free. Enjoy 🙂
- 2 cloves garlic
- 1 tablespoon grated ginger
- 1 onion (thinly sliced)
- 1/2 cup Tamari
- 1/2 cup Honey
- 1/4 cup Rice Wine vinegar
- 1/4 cup water
- 6-8 Organic Free Range Chicken Thighs
- 2 tablespoons cornflour
- 1/4 cup of water (extra)
Thinly slice onion and spread over the base of your slow cooker. Add chicken in 1 layer. Combine garlic, Tamari sauce, Honey and Rice Wine Vinegar in a small bowl and then pour over chicken. Allow to cook on low for 6-8 hours or high for 4-6. Remove chicken and shred with forks. Mix cornflour and extra water to form a paste. Add to sauce in slow cooker and stir until sauce starts to thicken (I normally put slow cooker back to high for this). Add chicken back to pot and allow to simmer for 5-10 minutes (I usually follow these steps then set to keep warm until we are ready to eat). Serve with brown rice and steamed vegetables. Enjoy 🙂
