I buy boxes of heirloom tomatoes from a local grower and I sometimes need to finish up the old box a few days before the new ones arrive. The tomatoes are too delicious to waste so I generally make tomato relish, tomato sauce or tomato paste.
I am not able to eat the relish because of the onion but I keep my friends and family in supply. I make this recipe exclusively in the Thermomix but it is easily converted to a stove top recipe – it just means you need to stand and stir rather than set and forget 🙂
Ingredients
- 1300 grams peeled tomatoes (score the bottom with a cross shape and cover with boiling water – wait 5-10 minutes then skin will easily peel off)
- 700 grams onions
- 400 grams of sugar (I use raw but feel free to use coconut or white if you prefer)
- 1 1/2 cups malted vinegar
- 1 teaspoon mustard powder
- 1 tablespoon mustard seeds
- 1 tablespoon curry powder
- 2 tablespoons of plain flour (spelt or white)
Add your peeled and chopped tomatoes and onion to your Thermomix bowl and chop 5 seconds/speed 5. Scrape down the sides and add the sugar and 1 cup of vinegar. Combine 10 seconds/speed 5. Remove MC and place varoma basket on top to collect any splatter. Cook the relish for 60 minutes/100 degrees/reverse speed 1.5.
Combine the remaining 1/2 cup of vinegar with spices and flour. Add to the Thermomix bowl and mix for 10 seconds/speed 3 then cook for a further 15 minutes/100 degrees/reverse speed 1.5. Pour relish into sterilised jars and seal 🙂
To store for longer you can water bath but to be honest it never usually lasts that long 🙂
