We tried a new recipe tonight and for once it was a hit with everyone (the picky husband and oldest daughter included 🙂 ).  I originally saw this recipe on the Good Chef Bad Chef television show.  After trawling the internet I found a similar recipe and just substituted ingredients.  I hop you enjoy it as much as we did.
Tomato RiceÂ
- 2 cup brown rice
- 1 tin pureed tomatoes
- 3 cups of organic free range chicken stock
- 1 red onion
- 1 cup frozen peas
- 2 cloves garlic
- bunch of fresh basil
If you have time soak the rice in some water for a few hours or even overnight. Â This will reduce the cooking time with brown rice. Â In a large non stick pan saute onions until soft. Â Add garlic and rice and cook stirring constantly for 3-5 minutes. Â Add tomato puree and stock. Â Stir until well combined. Â Put lid on pan and allow to simmer for 20-25 minutes stirring every 10 minutes. Â Add peas to the rice. Â If rice is a little dry add some water and replace lid. Â Allow to simmer for a further 5 minutes until peas are cooked. Â Stir through basil and serve. Â If you are looking to add more protein to this dish add some lentils just before serving. Â Tonight we had lamb and grilled corn cobs.
