I love potato bake and those who are restricting calories should look away now. For this recipe I use organic cooking cream (full fat). You can substitute this for low fat cream but I figure if I am having cream may as well have the good stuff. Tonight I used potatoes, sweet potato, red onion, zucchini and pumpkin. But you can add any vegetables you like (cauliflower, parsnip,leek etc).
Vegetable Bake
This recipe is pretty simple. Just slice your vegetables into rounds. Season with salt, pepper and garlic. Pour over cream. Cover with foil and bake until vegetables are soft. Before serving sprinkle over cheese (parmesan and white cheddar) and cook until browned. Enjoy 🙂
