It is nice to have the time to have a special breakfast on weekends. There is no rushing to get ready for school and work. These pancakes freeze really well too so if you are craving something nice on a weekday just defrost. For pikelets just make a smaller portion.

Wholemeal Apple Cinnamon Pancakes
- 2 cups wholemeal flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons bi carb soda
- 1 tablespoon honey
- 1 tablespoon maple syrup
- 2 eggs, lightly beaten
- 1 3/4 cups milk
- 2 tablespoon butter, melted
- 1 apple, peeled and grated
- 1 tablespoon cinnamon
Mix all dry ingredients together in a bowl. Whisk in wet ingredients until smooth. Gently fold through grated apples. Fry in a non stick pan until bubbles appear. Flip over pancake and allow to cook until brown. Serve warm with maple syrup.
